I just love Christmas time. I love everything about it. On Sunday afternoon we put up our tree and decorations. I love watching the kids excitement, as they find special treasures they have made or forgotten about. It is such a special time of the year. Kloe had the carols all ready to play- because she said "We always have Christmas music on when we put our tree up"
And here is the finished masterpiece - I just wish I could take a better photo, of how pretty it looks
During the week our neighbour gave us a bag of lemons. Yesterday I made a Lemon Meringue Pie (Sorry Dad - wish I could pass you a piece or two)
It was really easy
1/2 cup SR Flour
3/4 cup Plain Flour
Mix first three in a food processor until like breadcrumbs, add the egg, mix until it forms a ball. Wrap and refrigerate for about 1hour. Roll out and line a pie dish. Blind bake for about 20 minutes
1 cup sugar + extra for meringue
3 Tbs cornflour
1 cup water
4 eggs - separated
1/2 cup lemon juice
Mix sugar and cornflour in a pot with a little bit of water to form a paste. Add all the water and cook until sugar is dissolved and thickens. Add lemon juice and butter. Take off heat - add eggs yolks and stir until thickened. Cool
Beat eggs whites with extra sugar to taste. Pour filling into pie case, Top with Meringue and bake at 180 until set.
Yesterday afternoon Kayla came home and said "Mum I need a secret Santa present for a boy" What do you get a 14 year old boy for under $10 in one afternoon???? Reindeer Poo of course LOL!!! We bought a bag of Maltesers and put them in a jar added a little decoration - Label reads Reindeer Poo, a lot of time, effort and energy was put into this special gift for you. She also got him some Chocolate deodorant, because apparently she is always using his, after sport.
Zac response was 'wicked'. Chris's response 'he totally cracked up' so I guess we are onto a winner.
